Om Eben Sadie Columella Red Blend
Eben Sadies legendariske Columella skabes af Swartlands terroir, årgangens karakter og en produktionsgang, der er holdt på et absolut minimum for at ikke at manipulere med smagen. Druerne er Syrah, Mourvèdre, Grenache, Carignan, Cinsault og Tinta Barocca fra de ældste vinmarker i Swartlands bjerge, hvor jordbunden bl.a. byder på granit, skifer, ler, grus og kalk.
Eben Sadie foretrækker sin vin frisk og atletisk snarere end fed og overmoden, og når druerne lever op til netop dét, kalder han til høst. I de tidlige morgentimer begynder holdet sin gang gennem vinrankerne; decideret umodne eller syge druer bliver hængende, men ellers kommer alt videre til vinhuset, for i Sadies optik er det sådan, årgangen taler sit ærligste sprog.
Vinificering
Inde i vinhuset knuses druerne i en gammel kurvepresse, hvorfra most og kvas hældes på åbne 2000-liters egetræskar for at indlede deres ca. 3 uger lange gæringsproces ved hjælp fra den vilde gær, druerne har bragt med sig fra markerne. Efter gæringen lagres vinen 20-24 måneder i franske egetræsfade. Den hverken filteres eller klares, før den kommer på flaske, og så er den ellers klar til afgang!
Aroma og smag
Columella er en langsom starter i glasset. Nænsomt og roligt åbner den op for nuancerne af bl.a. lysrød bærfrugt, blåbær, provencekrydderier, violer, sort the, friskkværnet kaffe og endda solmodne citrusfrugter i en kombination af dybde, kompleksitet og svævende lethed sjældent set.
På tungen er vinen som silke med en elegance og renhed i frugten, der overstråler alt andet Syrah-baseret vin og sender ens tanker i retning af kompositionen i de største vine fra Bourgogne.
Serveringsforslag
Dette er ikke bare en unik vin i Sydafrika; Columella hører til i den absolutte verdenselite, og der kommer kun yderst begrænsede mængder til Danmark. Columella er smuk til rosastegt lam, grillet fjerkræ med urter, okse i let krydret sauce, grøntsagsretter med svampe og aubergine, eller en moderat krydret vegetarret, hvor jord og urter får lov at spille med.
Vi anbefaler at ilte vinen 2-3 timer før servering ved 15-16 grader.

"Black cherries, fresh plums, sandalwood, peach pits, sage and cloves on the nose of this deliciously polished and complex red. It’s medium- to full-bodied, intense yet full of finesse and elegance, with firm and very fine-grained tannins. Long, continuous and delicious, with a beautiful interplay of fruit and spice. I love this wine. Syrah, mourvedre, grenache, carignan, cinsault, tinta barocca and pinotage. Drinkable already but better after a couple of years."

"One of South Africa's most critically acclaimed wines, this is a very complicated blend of Syrah, Mourvèdre, Grenache, Carignan, Cinsault, Tinta Barocca and Pinotage. Syrah leads at 38% of the total. The Sadie Family's 2022 Swartland Columella boasts unique DNA that cannot be replicated given that fruit is sourced from across 12 vineyard sites with a mix of granite, slate, gravel and sandstone. These sites are Paardeberg (with seven vineyards), Kasteelberg (with three vineyards), Malmesbury (with one vineyard) and Piquetberg (also one vineyard). Blending is never done in the winery. Instead, parcels are picked in sequence and co-fermented. The same blocks are always used. It matures over 24 months to show enormous balance and length. Columella is texturally rich and caressing with grippy tannins that need more time to fully resolve. The 2022 vintage is terrific, Eben Sadie tells me during our tasting in his newly finished winery, whereas 2024 was challenging. The bouquet on the 2022 is chiseled and etched with a note of pencil shaving or white pepper that cedes to dark fruit, spice and heritage rose."

"From the first sniff, the 2020 Columella is an instant champion that is pointing and swinging for the fence. With its fresh frame of fruit and expertly layered oaky essences, the wine is incredibly complex as it bursts from the glass with precision and finesse. Medium-bodied and with 13.5% alcohol, the Columella somersaults into a phantasmagoria of bright crunchy red fruit flavors and seductive floral essences that makes my head spin. Collectors will take note and add a couple of bottles of this to their cellar. It’s an absolutely stellar bottling that will age gracefully for decades."
