Om Eben Sadie Palladius White Blend
Fra nogle af de ældste marker på Paardeberg-bjerget i Swartland kommer druerne til Eben Sadies top-hvidvin, der - modsat andre producenters topvine - er et blend af mange forskellige druer fra et faktisk relativt bredt udsnit af marker med enslydende jordbundsforhold. Jordbunden byder således på grus og granit, og druerne chenin blanc, grenache blanc, clairette blanche, viognier, verdelho, roussanne, marsanne, semillon gris, semillon blanc, palomino og colombard kommer således alle fra gamle, busktrænede vinstokke hjenne i Eben Sadies skønne Swartland.
Dette er med andre terroir-vin på allerhøjeste niveau!
Vinificering
I vinhuset presses druerne i en gammel kurvepresse. Efter gæring lagrer vinen på en blanding af ler-amforaer, franske egetræskar og enkelte 600-liters betonkar. Vinen hverken filtreres eller klares, inden den kommer på flaske, og så er det, magien sker:
Aroma og smag
Når den får tid og ro - evt. efter en time eller to i en karaffel inden servering - åbner den verden af de friskeste citroner, spæde mandler, ferskensaft af den fineste slags og dertil både anis, kalksten og blomstermark i fuld flor.
På tungen er vinen overvældende intens og samtidig letløbende, som kun det så ofte er tilfældet for verdens allerstørste vine. Syren sidder perfekt og holder vinen i fornem balance kombineret med de intense og mineralskprægede smagsnuancer, som må opleves, da de næsten ikke kan beskrives.
Serveringsforslag
Columella er en unik hvidvin i en vinverden, hvor vinene ligner hinanden mere og mere. Vi anbefaler at servere den afkølet - ikke decideret kold - ved 10-12 grader for at få det optimale udbytte.

"Very fresh and exciting, showing lemon curd, wild thyme, white pepper, sliced apple, pear, clove and crushed stone aromas. It’s layered and creamy, complex, with a full body and wonderful freshness brought by mineral and very subtle herbal undertones. Long, salty and structured. A blend of 14 varietals. Drink or hold."

"I am a white wine fanatic, and this very special wine blew me away. The Sadie Family's 2022 Swartland Palladius is a blend of 11 grapes from 17 distinct vineyard sites with old vines. The grapes used are Chenin Blanc, Grenache Blanc, Clairette Blanche, Viognier, Verdelho, Roussanne, Marsanne, Semillon Gris, Sémillon, Palomino and Colombard. The various vineyards are located in Paardeberg, Piketberg and Saint Helena Bay. "This is the most complex wine and difficult to make," says Eben Sadie. "A white wine needs to achieve more than a red." Made with blends and co-ferments, the Palladius presents challenges during harvest, as the fruit begins to come in at various stages and the tanks begin to fill. It sees 12 months in amphorae and concrete, plus 12 months in old foudre. It presents a spectacular collection of stone fruit aromas, lemon blossom, pastry cream filling, saffron and light spice. The Palladius is silky, textured and has enough structure for long cellar aging. This is indeed a star of the Southern Hemisphere."

This is an impressively layered and complex white, the result of a blend of 11 varietals from 17 vineyards across the Swartland. Aromas of jack fruit, sliced pear, green papaya, flint, grapefruit and hazelnut are all in play, followed by a full-bodied palate with a caressing and supple texture. Seamless, evolving to spices after a while. Even better than 2021? A blend of chenin blanc, grenache blanc, clairette blanche, viognier, verdelho, roussanne, marsanne, semillon gris, semillon blanc, palomino and colombard, all vinified separately. Try after 2025.

"The 2022 Palladius is a blend of Chenin Blanc, Grenache Blanc, Marsanne, Roussanne, Sémillon Blanc & Gris, Palomino, Verdelho, Colombard, Clairette Blanche and Viognier from several sites. Eben Sadie says that this is the wine he has wanted to make. It has a delectable nose with wax resin, linseed oil and hints of orange blossom. The palate is well balanced with a killer line of acidity. Taut, fresh and saline, it possesses immense "nervosité" on the finish that lingers in the mouth. This is even better than the 2021."
